{"id":534,"date":"2010-04-22T08:02:12","date_gmt":"2010-04-22T13:02:12","guid":{"rendered":"http:\/\/tastytangents.com\/?p=534"},"modified":"2010-04-22T08:02:12","modified_gmt":"2010-04-22T13:02:12","slug":"old-fashioned-nut-loaf","status":"publish","type":"post","link":"https:\/\/www.tastytangents.com\/?p=534","title":{"rendered":"Old-Fashioned Nut Loaf"},"content":{"rendered":"<div id=\"attachment_540\" style=\"width: 610px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/tastytangents.com\/wp-content\/uploads\/2010\/04\/nut_loaf_100418.jpg\"><img aria-describedby=\"caption-attachment-540\" loading=\"lazy\" src=\"http:\/\/tastytangents.com\/wp-content\/uploads\/2010\/04\/nut_loaf_100418.jpg\" alt=\"Old-Fashioned Nut Loaf\" title=\"nut_loaf_100418\" width=\"600\" height=\"450\" class=\"size-full wp-image-540\" \/><\/a><p id=\"caption-attachment-540\" class=\"wp-caption-text\">Old-Fashioned Nut Loaf<\/p><\/div>\n<p>For a book that begins with &#8220;Dear Homemaker,&#8221; the recipes in the old <a href=\"http:\/\/www.pillsbury.com\/\">Pillsbury&#8217;<\/a>s Bake Off Breads Cook Book are actually fairly quick in terms of labour, though the resting periods for the bread mean you can&#8217;t be off anywhere for a few hours.<\/p>\n<p>Even though my recipe didn&#8217;t turn out perfectly, it was still delicious, and I&#8217;m pretty sure that the only problem was that my milk was too hot when I added it to the yeast.<\/p>\n<p>I&#8217;ve always been a little bit afraid of recipes that call for yeast, because so many things, and especially something as problematic as temperature, can have a big impact.<\/p>\n<p>But this recipe has shown that even if it&#8217;s not as light and fluffy as you&#8217;d expect, it can still be a delicious bread.<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p>2 1\/2 to 2 3\/4 cups flour<br \/>\n1\/4 cup sugar<br \/>\n1 1\/2 tsp salt<br \/>\n1 package active dry yeast<br \/>\n3\/4 cup milk<br \/>\n1\/4 cup butter<br \/>\n2 egg yolks (reserve whites)<\/p>\n<p><b>Nut filling:<\/b><\/p>\n<p>2 egg whites<br \/>\n2 tbsp sugar<br \/>\n1\/4 tsp nutmeg<br \/>\n3\/4 cup finely chopped pecans<br \/>\n3\/4 cup flaked coconut<\/p>\n<p>In large bowl combine 1 cup flour, sugar, salt and yeast. Heat milk and butter in microwave until milk is warm (butter doesn&#8217;t need to, actually shouldn&#8217;t, melt). Add to flour mixture along with egg yolks. Gradually add rest of flour, mixing well.<\/p>\n<p>Cover, let rise in warm place until light and doubled in siez, about 2 hours.<\/p>\n<p>Make nut filling by beating egg whites slightly in small mixing bowl and stirring in remaining ingredients, mixing well.<\/p>\n<p>Punch down dough and roll out on floured surface to a 12&#215;9 inche rectangle. Spread with filling. Roll up, starting with 9 inch side. Seal edges and ends (use a little water on your finger if dough won&#8217;t stick). Place seam-side down in greased 9&#215;5 inch loaf pan. Cover and let rise in warm place until doubled in size, about 90 minutes.<\/p>\n<p>Preheat oven to 350F.<\/p>\n<p>Brush with milk and sprinkle with 1 tbsp sugar.
