Guacamole

I seem to be destined to try dozens of recipes for this avocado dip. Then I always try just eyeballing some similar combination, which usually turns out okay, but a sense of ‘something’ missing. The latest contestant is the ‘Company’s Coming: Healthy Choices’ recipe for ‘Special Guacamole.’

Here’s what the recipe says to do:

Mash:
-one large, ripe avocado in a medium bowl
Mix in:
-1 tbsp finely chopped green onion
-1 tbsp lime juice
-2 tbsp finely chopped Jalapeno pepper
-1 minced garlic clove
-1/4 tbsp ground cumin
-sprinkle of pepper
Then add:
-2 medium tomatoes chopped

I doubled this recipe to serve 6, but still only used 2 tomatoes, and left in the seeds and juice. I also took the seeds and white ribs out of the jalapeno and substituted lemon juice for the lime and red onion for green. (I’m big on using whatever happens to be in the house.)

The verdict:
On the whole, I’d say a bit of salt would have been helpful, and maybe leaving in the seeds and ribs of the jalapeno might have given it the heat it needed. As it was, it’s a pretty standard guacamole recipe. In a pinch, I’d use it again, but I’d add more heat! If I had to rate it, I’d say 3 bites out of 5.
